Chinese Chicken Spaghetti

Ingredients

  • 12 ounces spaghetti (Consider whole grain)
  • 1 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil (I used extra virgin olive oil)
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon ground ginger (I used fresh ginger. Consider ginger paste)
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon canola oil (I used extra virgin olive oil)
  • 2 pounds skinless chicken breasts, cut into bite sized strips
  • 2 cups snow peas (I chopped)
  • 2 cups shredded carrots
  • 1 bunch green onions chopped (I used yellow onion on hand)

Instructions

  1. Cook pasta according to package directions.
  2. In small bowl, whisk together corn starch, soy sauce, sesame oil, vinegar, ginger and red pepper flakes. Set aside.
  3. In a large wok (I used pan), add oil and stir-fry chicken until juices run clear. Remove to a bowl and set aside.
  4. Add snow peas and carrots and stir-fry until crisp tender, about 5 minutes. Add onions, and stir together.
  5. Return chickn to the pan and toss with vegetables. Stir in soy sauce mixture and add pasta to wok, tossing to combine. Serve immediately. (I added sesame seeds to top.)

Whole snow peas rather than chopped does make a better presentation.
